I made this recipe from our church cookbook tonight. It was very yummy and all 3 of us liked it alot. I liked that it was easy to make and used basic ingredients. :)
Mexican Cornbread Casserole
Ingredients:
2 pkgs. cornbread (I used Jiffy)
1 can Rotel
1 can cream style corn
1 lb. ground beef (I used ground turkey)
2 lbs. shredded cheese (I don't see how it needs this much cheese, I only used about 3/4 of a bag so that would be 3 cups)
1 small onion
Directions:
Chop the onion. Brown the ground beef and onion and drain. Mix the cornbread and preheat the oven according to the package directions. Add the Rotel and corn to the cornbread mixture. Spray the bottom of a 9x13 baking pan with a nonstick spray. Add a small amount of the cornbread mixture to the bottom of the pan. Spoon the hamburger on top of that. Then add the cheese on top of the hamburger. Spread the remaining cornbread mixture on top. Bake according to the instructions on the cornbread package.
My Notes:
1. Next time hubby and I agreed that instead of layering everything that I'll probably just mix it all up and pour in the pan.
2. I also might add more meat, maybe another 1/2 pound.
3. Again, I don't see how you need 2 lbs. of cheese for this. I just used 3 cups.
4. The Jiffy cornbread calls for 20-25 minutes in an 8x8 pan for one box. I ended up cooking this a total of 40 minutes (I did 20 minutes at first and then 10 and then another 5 and 5 as I kept checking since the center was still wet). Next time I'll probably lower the cook temp to 375 and cook for 45-50 minutes to get the center cooked and keep the edges from browning too fast.
Anyways, it really was yummy and we'll definitely eat again. If you make this, let me know how it turns out! :)
